Gotta be a gumbo somewhere

Craw Daddies First sighting ~ OH YEAH BABY, Sarah’s Pond really begins. Seeing this dude made me think of Cajun food, so some little silliness after my ranting this a.m. about the Geese. The Geese have somewhat settled down; they still throw glaring looks at me. Just to whet your appetite read these two. Tomorrow the step by step of a project soon to be realized...
Sweet Cajun Crayfish (4) Ingredients

1 c Catsup

1 tb Honey

1 tb Brown sugar

2 tb Vinegar

2 tsp Hot sauce

1 tsp Cayenne pepper

1/2 tsp Thyme

1 tsp Black pepper

1 tsp Onion powder

1 lb Crayfish, peeled and deveined

Instructions

Combine all ingredients except crayfish in a sauce pan.

Heat thoroughly.

Cook crayfish in boiling water for 5 minutes or until crayfish turns pink.

Brush sauce over crayfish.

Opus Number 21 Marshall Creek Crawdaddy Gumbo 20 or so crawdaddys

2 pounds shrimp

chopped onion and celery

chopped red and green pepper

chopped tomatoes

small can tomato sauce

garlic, salt, pepper, cajun spices

bacon grease, flour

Make a roux of bacon grease and flour.

Add the crawdaddy and shrimp meat and cook until just starting to turn pink.

Put aside.

Sauté the onion, celery, peppers, and garlic in

Add the tomatoes, tomato sauce, and spices.

Add a cup of white wine for flavor.

Add the meats and heat through for about 30 minutes

Serve over white rice
